Mild Cheddar

Other countries may have used the name but Cheddar remains a cheese synonymous with Britain. It is the most well know and widely purchased cheese in the world and British Cheddar is widely acknowledged as the best. This full-bodied Mild Cheddar is smooth and tender with a rich, creamy flavour that is mouth-watering with some fresh English apple juice and equally appetising with a Zinfandel.

Medium Cheddar

Modern Cheddar may be manufactured around the world, but the UK can rightfully boast that it is home to the original and the world's finest Cheddar. Medium Cheddar is typically matured for between six and ten months and this smooth Medium Cheddar is full-bodied with a rounded, savoury flavour. A subtle hint of sweetness makes it the perfect companion for a glass of fresh English apple juice.

Mature Cheddar

Cheddar is synonymous with the West Country - where it was originally made in the fifteenth century- and is the world's favourite cheese. Carefully matured under controlled conditions for between nine and twelve months, this Mature Cheddar has a wonderful flinty texture and a distinctly savoury flavour with a refreshing sharpness. An unusual but rewarding accompaniment for this cheese is Guinness. A more common and equally enjoyable companion is Merlot.

Extra Mature Cheddar

As English as cricket, Cheddar is the world's most beloved cheese and Britain has always been the best at making it. A long maturing process under controlled conditions produces this wonderful Extra Mature Cheddar with its strong, savoury flavour and hints of deeper sweetness. Such lingering flavour suits Merlot and also finds an unusual and gratifying partner in lager.
